A Better Tuna Pasta Salad

A Better Tuna Pasta Salad

This salad has become a real favorite in our house.  It comes together quickly and is so delicious served over a beautiful bed of BBF Salad Greens.  Filling, fast and healthy – just right for our hard working family.

Recipe inspired by one of our favorite chefs, Julia Turshen.

2 – 5 oz. cans Tuna, we prefer Sea Tales brand packed in olive oil, we don’t drain

2 T capers

2 T Fresh herbs – chives, fresh mint, dill, parsley or some combination

1 medium onion, diced, about 1/3 – 1/2 cup

4 stalks celery with greens, diced

3/4 c organic walnuts or pecans halves, rough chop

2 T Lemon Juice

1/2 – 3/4 cup mayo

1 dollop Dijon or favorite grainy mustard

1 tsp ground Turmeric, optional

12 oz favorite small pasta – macaroni, shells, bow-ties

Cook pasta until done, drain and run cold water over.   Drain well again, shaking colander, and place in large bowl.   Add rest of ingredients, breaking up tuna as needed, and toss gently with wooden spoon to avoid damaging pasta.  Taste for seasoning adding salt, lemon as needed.

Serve cold over a bed of dressed BBF Salad Greens for the perfect lunch or dinner.
