Spiced Chai Tea

There’s no Chai tea like one made with your own pungent, lightly toasted spices, freshly crushed ginger and local raw honey.   This recipe will elevate your Chai enjoyment to the highest level.  We absolutely love it and hope you do, too.

One 1-inch piece ginger

Two cinnamon sticks

5 green cardamom pods

5 whole cloves

1 teaspoon black peppercorns

2 cups cold water

4 black tea teabags

2 T Honey

2 cups whole milk

Wash ginger and crush in mortar and pestle.   There is no need to peel the ginger unless you prefer.  Remove and set aside.

Place cinnamon sticks, cardamom pods, cloves, and peppercorns in mortar and crush with pestle until coarsely ground.

Transfer the spices to a medium saucepan set over medium heat and cook, stirring, until very fragrant, about 1 minute.  Add the ginger, 2 c. water, tea bags, and honey.  Cover and increase the heat.  Once bubbles form around the edge, immediately reduce heat to low and let the mixture simmer for five minutes.  Stir in the milk and let tea cook for 1 more minute, then turn off heat.  Strain through a fine-mesh sieve into a teapot or straight into mugs.   Serve immediately.
