Radish Quinoa Salad with Feta

This recipe was shared way back during our 2015 CSA season. It’s worth repeating because it’s so delicious. We make this often in the spring with the pretty red radishes and in the fall when we harvest daikon. It is definitely a keeper and one we hope you will try.
1 bunch of radishes, about 1 1/2 cups finely chopped
1 small onion or green onions, chopped, about ½ cup
½ cup finely chopped mint
½ cup chopped fresh parsley
2 cups cooked, cooled quinoa
½ cup crumbled feta cheese
2 Tbsp. fresh squeezed lemon juice, can include zest as well
3 Tbsp Organic Roots EVOO – use the best!
Salt and pepper to taste
Dice the radishes into small pieces. Place the radishes, onion, mint, parsley and quinoa in a small salad bowl. Add the lemon juice, olive oil, salt and pepper. Toss gently. Add crumbled feta cheese. Taste and adjust seasoning and dressing. Our family loves putting this over a dressed green salad. Perfect summer meal.
